October Cooking Club 2007

Chicken Crepes with Avacado
8 Crepes
1 t. Salt
5 T. Butter
1/4 t. pepper
5 T. Flour
2 T. chopped Parsley
1 C. Chicken Broth
2 C. Cooked Chicken
1 C. Heavy Cream
1/2 C. Olive slices
3/4 C. Dry white Wine
Avacado Slices
1 C. Grated Swiss Cheese
Paprika
1/2 t. Worcestershire Sauce
Melt butter in saucepan and stir in flour. Add cream, broth and wine. Cook,
stirring constantly, until mixture is thickened and smooth. Add 3/4 c. of cheese
and stir till melted. Add Wocerstershire sauce, salt, pepper and parsley.
Add one cup of this wauce to combine chicken and olives. Divide Mixture
evenly among crepes and roll up. Place in a single layer greased shallow
baking dish. Dish and sauce can be covered and refrigerated at this point.
Before serving top each crepe with an avacado (if desired) and pour remaining
sauce, warmed, over all. Sprinkle with remaining cheese and dust with paprika.
Bake uncovered in 375 degree oven for 15-20 minutes or until hot and bubbly
and lightly browned
Julie's Crepe Recipe
1 C. Milk
1 C. Flour
1 Egg
1/4 C. Powdered Sugar
1 t. Vanilla
1/2 t. Salt
Mix all ingredients in blender till smooth. Spray fry pan with oil or butter and
wipe gently with a napkin. Pour small amount into fry pan and tilt pan until
you have a perfect thin circle. Cook on each side about 1 min. on medium.

Kamille's Specialty Salad
1 Pkg. Spinich
1 lb. Bacon , cooked
1 Head Romaine
1 pkg. mushrooms
3/4 lb. Swiss Cheese
1/2 Red Onion
Mix and cover for 24 hours.
Dressing
3/4 t. Poppy Seed
3/4 t. Salt
1/3 C. Apple Cider Vinegar
1 t. Dry Mustard
1/3 C. Olive Oil
3/4 t. Grated onion
1/3 C. Sugar
Chill dressing for 24 hours.
After 24 hours, put rinsed and drained cottage cheese in Salad. Add
dressing, mix and enjoy.
Amazing Bruschetta
2 Lg.Tomatoes
1 T. Fresh Oregano
1/2 Sweet onion
1 t. Fresh Basil
2 T. olive oil
2 t. Fresh Parsley
Combine in a bowl
(I also like to add crushed garlic and Sniders or salt and pepper)
1/2 Loaf Italian bread cut into 1 inch slices
1/4 C. Freshly grated parmesan cheese
Chop tomatoes, onion, oregano, basil, and parsley. Add olive oil.
Spoon tomato mixture on bread and sprinkle with parmesan cheese.
Bake at 400 till done.

Burnt Sugar Candy Bar Cake (newly named Overkill Cake)
3/4 C. sugar
2/3 c. softened butter
3/4 c. hot water
2 eggs separated
3 c. flour
2 t. vanilla
1 1/2 t. baking powder
1 1/2 c. finely chopped
1/4 t. baking soda
candy bars
1 1/2 c. sugar
Grease and lightly flour 2 9x 2 inch pans. In large skillet cook 3/4 c.
sugar over med-high heat until sugar just begins to melt. Do not stir.
Reduce heat; cook until sugar is golden brown, about 1-3 min more,
stirring constantly. Carefully stir in hot water. Bring mixture
to boiling; reduce heat. Continue stirring until mix is free of lumps.
Remove from heat, pour syrup into a large glass measuring cup. Add
additional water to equal 1 3/4 c. liquid. Set aside to cool. Preheat
oven to 350.
In a large mixing bowl stir together flour, baking powder, and soda. Beat
together the 1 1/2 c. sugar, the 2/3 c. butter, egg yolks, and vanilla on med.
untill smooth. Alternately add flour mixture and sugar syrup to egg yolk
mixture, beating on low after each addition until combined. Beat egg
whites till stiff peaks. Fold into batter. Divide batter into baking pans.
Bake 25-30 minutes or until done.. Cool in pans on wire cooling rack for
10 min. Remove cake from pans; transfer to wire rack and cool completely
Browned Butter Frosting
1/2 c. butter
6 oz. cream cheese, soft
1/2 t. vanilla
3 T. butter
4 1/2 c. powdered sugar
2 C. powdered sugar
2 -3 t. milk
Garnish : Coursely chopped assorted candy bars
Melt butter in small saucepan. Continue heating until butter turns a nut
brown color. Remove from heat; cool 5 min. In a large mixing bowl beat
together softened cream cheese with 3 T. butter until combined. Beat
in 2 c. powdered sugar. Beat in the browned butter and vanilla. Gradually
beat in 4 1/2 more cups powdered sugar and 2-3 t. milk until frosting is
of spreading consistency.
To Assemble:
Spread 1/2 c. frosting over bottom of one cake.
sprinkle with finely chopped candy. Stack cakes.
Frost and top with coursely chopped candy bars.
