#1 This Weeks Menu

Sweet n Sour chicken
Joyce

Combine in pan
Oil
1-2 T. Chopped Ginger
2 cloves Garlic
1 med Onion
3 Chicken Breasts
1 Green pepper
3-4 Carrots.

Chop Veggies and Saute till carrots are done.

Sauce
Pineapple juice
¼ c. soy sauce
2 heaping T. cornstarch

Mix all together and simmer. Add vinegar and brown sugar to taste.

Chili and Cornbread
Chili

½ Onion
1-2 Green Pepper
1-3 c. Carrots
1 can Kidney beans, rinsed
2 cans Black beans, drained
2 cans Chili beans and juices
3 cans Diced tomatoes
¼ c. chili powder
Garlic or garlic powder
½ t. Oregano
1+ T. Cumin
Salt and Pepper

Simmer all ingredients except beans until veggies almost done. Add beans until veggies done. Add sliced Polish Sausages and cook 10 min.

Top with sour cream and cheese.
Serve with cornbread

Cornbread

1 c. yellow corn meal
1 c. sugar
2 c. flour
1 t. salt
2 T. baking powder

Mix then add
2 eggs
2 c. milk
2 T. melted butter

Put in greased 9x13 pan.
Bake 20 min at 400

Optional: Can add 1 can corn for rougher texture.

Black Bean Burritoes


Burrito esembly

Tortilla
Rice
Blackbeans with a little juice
sauted onions (if desired)
Sour cream
Cheese

Roll, by folding edges in to keep everything inside. Spread butter on one side. Put in fry pan and butter the other side. Cook for about 2 min. on medium. Turn over and cook the other side. Serve with sliced avacado and salsa.
